Mushroom Cake
4 - egg Victoria sandwich cake mixture
75g of chocolate butter icing
3 tablespoons of apricot glaze (jam works just as well)
250g red moulding icing (or butter icing)
liquorice allsorts (hundreds and thousands can be used)
25g of gree butter icing
1 marshmellow (optional)
hundreds and thousands
sugar flowers
Step 1
Preheat your oven to 160centigrade.
Step 2
Cleanly remove one end from an empty 800g can/tin and
clean thoroughly.
Step 3
Grease and flour the can/tin and a 2pint/1.2 litre ovenproof
bowl.
Step 4
Turn the cake mixture into the containers, two-thirds filling
the can/tin. Make sure the cake surfaces are level.
Step 5
Place in your preheated oven for 50 min for the an/tin and
55 – 60min for the bowl.
Step 6
When cakes are cooked and have cooled loosen the edges
with a long thin knife and turn out onto a wire rack to cool
some more.
Step 7
Cover the can/tin cake with chocolate butter icing.
Step 8
Brush the basin cake with apricot glaze. Roll out the moulding
icing thinly. Lift onto a rolling pin and position over the bowl cake.
(Instead of moulding icing butter cream can be an option).
Step 9
Carefully place this cake on top of the other cake for the roof.
(4 cocktail stick are great to keep this in place).
Step 10
Cut a few liquorice allsorts into thin slices and stick onto the roof to make spots. If you have used butter icing hundreds and thousands are great to sprinkle on the roof.
Step 11
Make a door and windows from the liquorice allsorts and a chimney with the marshmallow.
(Optional step) Step 12
Use green butter icing and rough up with a fork to represent grass. Make a path up to the door with small triangles of liquorice and hundred and thousands. Decorate with sugar flowers.
